Mel’s Meals Review

As you all know…or don’t know I had the pleasure of being treated to 5 of Mel’s Meals.  If you haven’t heard of them yet you can check it out here: http://www.melsmealsaustin.com  Below you will find a review of 5 items/meals that my family & I tried this past week.

Turkey Meatloaf with mashed sweet potatoes & green beans

This was my favorite of the 5.  Comforting, hearty, and yet healthy.  I did add a pinch of sea salt & a lot of pepper (I love pepper) and a spot of organic ketchup.  I’m a salt-a-holic…I crave it.  So much that as a child I was caught licking the deer salt blocks in the feed store with my grandpa :P  SOoooooo it’s great that Mel does not add salt or sugar to the meals and a sprinkle does the trick.

The mashed sweet tators were moist and a bit chunky which is a good thing.  Most mashed sweet potatoes are very smooth so this was a welcome change.  I was told the green beans were done perfectly, they were still a little crisp.  I say I was told because I don’t like green beans unless they are smothered in a soy/chili sauce like at Asian restaurants.

We give a thumbs up!

Spicy Poblano Pork with sweet potatoes

This dish looks very delicious and was enjoyed by my partner Matt.  He liked the small spice, sweet potatoes, and the creamy sauce.  It was flavorful and did not need any addition of salt or pepper.  This dish was tasty but not my favorite…mainly because the pork was kind of bland but like I said we had a fan in the house.

Chicken & Quinoa Stuffed Peppers

I chose to have this as my dish and I was disappointed. Not because it wasn’t tasty or good quality healthy food but because I like to have a warm/hot comforting meal for dinner and this is more of a lunch meal.  It is very fresh and I added a bit of Siracha.   I would recommend this as a fresh, quick lunch with maybe a cup of soup.

Chicken Enchiladas

I must state although this photo is from Mel’s site the enchiladas do not look like this and I was happy about it.  The enchiladas were my son’s choice and he loved them.  This dish was my 2nd favorite of the 5, although it is a simple prep it was a good flavor because of the homemade tomatillo salsa on top.  It had a bit of spice but not too much and the enchiladas were not swimming in a sauce or cheese like most restaurants.  This is the reason I never order enchiladas, I would eat these again.

Chocolate Flourless Cake with Raspberry

Last but certainly not least.  This was delicious and not sugar laden like most desserts.  I was a little sad to only see 1 raspberry on the cake but I made due :)  The cake is a single serving with rich slightly bitter chocolate  flavor that is escorted wonderfully by the sweetness of the raspberry. For sure my very favorite but hey it’s chocolate and flourless. I would get this again and again….and again….and……

Next items I would like to try of Mel’s:

  • Apple Walnut Salad
  • Huevos Ranchero
  • Thai Chicken Wrap (because I love Thai)
